In 2010, we set out to put Canada on the map for sea salt production. Surprisingly, despite our country's expansive and pristine coastlines, we did not have a thriving sea salt industry. The idyllic shores of Vancouver Island provide the perfect "merroir" for crafting exceptional sea salt. Situated on a stunning 400-acre farm with over 2 km of untouched ocean frontage on Oyster Bay, we draw from some of the world's fastest moving ocean currents. Nearby glacier-fed rivers bring a unique blend of minerals to our salt while keeping the water source clean and unspoiled.
We're proud to say that every drop of seawater entering our saltworks ultimately ends up as a value-added product. Our main by-products, including fresh water and concentrated ocean mineral brine, are used in nearby agriculture and by local artisans in a variety of products. This commitment to sustainability is at the heart of our operation.
But our sea salt isn't the only treasure we're excited to share. We've also perfected the art of producing liquid nigari - a magnesium chloride brine that makes the best tofu. In Japan, nigari tofu is prized for its refined texture and balanced flavor profile, often commanding a significant premium over tofu made with other coagulants.
Our liquid nigari is crafted with the same attention to detail as our sea salt. Seawater is drawn from pristine shores, micro-filtered, and boiled at high temperatures to ensure purity. The result is a highly concentrated coagulant that can handle approximately 25 gallons of soy milk, depending on your recipe and preferences.
The benefits of using our liquid nigari go beyond just superior tofu. It can also be used to make delicious ricotta and other soft cheeses, enhance the fermentation of sauerkraut, kimchi, and sourdough bread, and even improve the sweetness and fluffiness of cooked rice.
